Cinnamon rolls
Heat:
125 ml milk
+ 30 grams butter
+ 25 grams Sugar
in a pan.
Heat until just short of boiling. DO NOT BOIL.
Remove from the heat and let it cool until warm. Add Yeast and mix in.
In a separate bowl whisk together:
140 grams flour
+ 1/4 tsp baking powder
+ 1/4 tsp baking soda
+ 1/4 tsp salt.
Add the flour mixture to the wet ingredients with a wooden spoon to form a loose dough.
Cover the bowl with cling wrap to rise for an hour.
After it has risen, turn out onto a floured surface and knead it all in for 5-10 minutes.
Take about the dough and roll it out into a rectangle.
Make the filling by mixing:
40 gms sugar
+ 2 tsp cinnamon powder
Melt the butter in a pan.
Using a silicon brush cover the rolled out dough with a thin layer of melted butter.
sprinkle liberally all over with the cinnamon sugar mix making sure all corners and center is covered.
Starting from the long side corner, fold/roll the dough up and close like you would roll a swiss roll until you reach the next corner.
Now take the sharpest knife you have and cut the roll into 2 to 2 1/2 inch sections.
Place them in a greased pan almost touching each other. Let these rise about 20 minutes and put them into the oven at 200 C for about 15 minutes till top is golden brown.
Melt 15 grams butter in pan. Take it off the heat.
Place the 1 cup powdered sugar, melted 15 grams butter, and 1/2 tsp vanilla in a medium bowl.
Stir in dairy cream 1 tablespoon at a time until the mixture has a thick, yogurt-like consistency.
Spread the icing over the warm rolls.
Serve warm or cool.
Whisk together:
60 grams cream cheese
30 grams melted butter in a medium bowl until completely combined and smooth.
Add 1/2 tsp of vanilla extract and a pinch of salt and whisk again.
Whisk in 1/2 cup icing sugar until fully blended.
Add milk, 1 tablespoon at a time, until the mixture reaches a pourable, but still thick, consistency.
Pour and spread the icing evenly over the warm cinnamon rolls in the pan, making sure the tops of the rolls are completely covered. Serve warm with coffee and watch people's eyes light up with unadulterated joy!
