Chocolate chips cookies look amazingly tempting and inviting, and of course the best ones I have had which were ooey, gooey and chewy were in the US of A. Since then have been on the look out for a recipe to replicate the same.
When a friend of mine posted pictures of chocolate chip cookies she had baked, one look at them and I knew I had found what I had been looking for all this while. I requested her for the recipe, and she was generous enough to share it with me.I took full advantage and tried it in my kitchen. Since my mom likes everything eggless I had to convert them into one, and since I adore chocolate I decided to make them double chocolate chip cookies. Yes I am in love with them, have given them as Diwali gifts to my friends and family, and they have been a huge hit. Yes they are ooey, gooey and full of chocolatey goodness. If you want them to be chewy bake them a for a shorter period of time and you could even add walnuts to them if you want something nutty.
Preheat the oven to 180 C and grease two cookie trays.
Using an electric beater whisk together in a bowl:
+ 25 grams caster sugar
+ 50 grams brown sugar
+ 58 grams butter
Beat until light n fluffy.
(incase you don't have an electric beater you can always do it by hand using a whisk, it won't kill you and it will make you only stronger and would be a good workout for your arms)
In a small bowl mix the 1/2 tablespoon flax seed powder with 11/2 tbsp of warm water and let it sit for 5 minutes.
Mix in 1/2 teaspoon of vanilla into flaxseed mixture.
Add the flaxseed mixture to the creamed butter and sugar mixture and whisk well.
Sieve 75 grams of flour, 20 grams cocoa powder and 1/4 teaspoon baking soda in this mixture.
Combine very well.
Add in 75 grams of chocolate chips to and walnuts(optional).
Incorporate well.
Using an ice cream scoop, scoop the prepared cookie dough out onto the greased cookie tray at least 2 inches apart as the cookies will spread once they start baking.
Bake for about 12-15 minutes until the bottom of the cookie is slightly coloured.
Take them out and let them cool on a wire rack.
This will make about 12 medium sized American double chocolate chip cookies ready to be dunked in milk.
