Vegetarian focaccia bread
I have always been fascinated with focaccia. It is an Italian flat oven baked bread similar to pizza dough in texture and taste. You can have this bread with a just a sprinkling of sea salt or use your imagination and go crazy with different topping i.e. olives, onions, tomatoes, oregano and the list goes on.
You can have this bread as a side dish, accompaniment to pasta or just by itself by dipping it in a concoction of olive oil and balsamic vinegar. The choices are endless.
Mix all the ingredients for the focaccia together.
Knead well till you get a supple and somewhat sticky dough.
Roll the dough in oil and set in a covered bowl until doubled.
Gently shape the dough into a circle or rectangle onto a greased cookie sheet.
Prepare infused oil by mixing all ingredients of infused oil and let it rest for 25 minutes.
Cover and set aside for about 10 minutes. Now dimple the dough with your fingers (These dents are going to hold all the lovely oil you have been infusing)
Tuck in little olives or any toppings of your choice.
Sprinkle a little sea salt on the surface of the focaccia and drizzle with the herb infused oil.
Pre-heat your oven to 200 C and slip in your focaccia to bake for about 20 minutes or until golden brown.
