I had been wanting to make this salad for a very long time but was always short of one ingredient or the other. This lock down has been a blessing in disguise because we ended up stocking up on everything and when my mother told me there was watermelon in the house- the first of the season, my ears stood up and I thought what would be better than making a salad out of it.It is refreshing and cooling and the best thing one can have for dinner to cool you down during the oh so hot Delhi summer months. A hint of mint makes it even more refreshing and the dressing to which I add balsamic vinegar takes it to another level. I am a fan of balsamic vinegar, hence I add it to enhance the taste, but if you not one, you can definitely give it a miss. It is my current favourite summer salad, so easy to put together, wholesome, filling and cooling.
You can always throw in some rocket leaves if you want, another one of my favourites, but make sure to add the dressing just before you are about to eat the salad else it will become soggy. The good new for Indians is that we have started getting feta cheese made by our very own Indian brand for which we don't have to shell out an arm and a leg.
Deseed the water melon and cut in into bite size chunks.
Put the chopped water melon in a salad bowl and throw in hand torn fresh mint leaves and feta cheese.
Prepare the dressing
Whisk everything together under the dressing ingredients.
